Each spring, the peak of their flavor, our spruce tips are sustainably harvested by hand and brought back to our farm kitchen where they are macerated in organic brown sugar. The brown sugar pulls the oils from the tips creating a sweet and surprisingly citrus tasting liquid. 

Never diluted, this syrup is boiled to make just the right consistency without losing any of the incredible spruce flavor that makes it your go-to ingredient for everything from ice creams and salads to charcuterie boards and marinades.

5 fl oz. Vegan, Gluten-Free and Sustainably Sourced.

Applications:

Delicious on ice cream. My mom loves it on pineapple. My sister puts it on cream cheese on toast. Drizzle on pork or chicken. Maybe try it on a scone. Add it to a cocktail.

I’ve tried many of the products. And all of them are awesome. But the spruce syrup… Is on another level! I use it in tea and coffee. I’ve used it to marinades. I’ve used it to sweeten baking dishes. I use it in place of honey quite often. I cannot live without it! I was going to try to wait till I was up in Maine again to get some, but I don’t think I can wait! This stuff is amazing!

Wow! A whole new dimension for my vegetable dishes and mocktails

I love trying new things, so "Spruce Syrup" was a must. It did not disappoint. It brings a whole new flavor profile to my cooking and mocktails. Just a little goes a long way. Plus, I love the Pen & Cob story.

Incredible.

Drizzle over roasted veggies. Great on brussel sprouts or a drizzle in hot water to make a light, warm treat at the campfire.
