Each spring, during Maine's fleeting spruce tip season, we head into the forests of Downeast Maine to gather the tender, bright green tips that emerge for only a few short weeks each year. Our family and members of our community gather to hand-harvest tips at the peak of their flavor and aroma. Freshly harvested spruce tips are brought back to our farm kitchen, where they are slowly macerated in organic brown sugar using a traditional process that draws out their natural oils, vibrant botanical character, and surprisingly bright citrus notes.
The result is a small-batch culinary syrup unlike anything most customers have tasted before. Rich, concentrated, and never diluted, our spruce syrup is gently simmered to the perfect consistency while preserving the distinctive flavors that make spruce tips so sought after by chefs, bartenders, food enthusiasts, and adventurous home cooks.
